Honey Joys (Cornflakes Cookies)

A very simple, kid-friendly recipe that is very quick to put together. Only five ingredients and no mixer needed. Not only can you eat it as a snack, it is also suitable as a quick breakfast — it is made of cornflakes after all.

Honey Joys has its origins in Australia where it is a popular snack and party food. In Malaysia and Singapore, this treat is known as honey cornflakes or “cornflake madu”, popular among the Malay community during Hari Raya Aidilfitri (Eid Al-Fitr).

NOTES

  • If using unsalted butter, add ½ teaspoon of salt or to taste. Salt helps to balance out the sweetness.
  • If using coarse granulated sugar, wait until the sugar dissolves before taking mixture off the stove. Fine-grained or caster sugar will dissolve faster.
  • Instead of glacé cherries, you could use slivered almonds, raisins or other dried fruit or nuts. To decorate, you can use coloured sprinkles (nonpareils), as seen in the main picture above. Or drizzle melted chocolate for a more elegant look.
  • Baking for 10 minutes would give you slightly crunchy honey joys. For a more chewy result, take them out from the oven sooner.
  • Honey joys can be kept in an airtight container for at least two weeks. They can probably last longer but when I made these, they disappeared within 2 weeks.
